Liver Steak Recipe (Bistek na Atay)

A savory and tangy Filipino-style liver steak made with beef or pork liver, soy sauce, calamansi, garlic, and onions.

Ingredients
  

  • 1 lb Beef Liver
  • 1/4 cup Soy sauce
  • 3 tbsp Calamansi or Lemon Juice (less if you don't like it sour)
  • 5 cloves Garlic (minced)
  • 1 pc Large white onion (sliced into rings) add more if you are an onion lover
  • 1/4 cup Water
  • 3 tbsp Cooking oil (choose healthy options such as avocado oil)
  • 1/2 tsp Ground black pepper
  • 1/4 tsp MSG (optional)
  • Salt to taste

Method
 

  1. In a bowl, combine liver, soy sauce, calamansi/lemon juice, garlic, and black pepper. Marinate for at least 30 minutes.
  2. Use lemon if Calamansi is not readily available in your area. Don't use vinegar.
  3. Heat a pan over medium heat, add 1 tablespoon of cooking oil, and sear the liver slices, cooking each side just long enough for the color to change. This step helps bring out the liver’s flavor. Remove from the pan and set aside. Pour any remaining liver sauce into the marinade.
  4. Searing / frying is what makes a liver steak or a beef steak tasty.
  5. In the same pan, add the remaining cooking oil and sauté the garlic until golden brown over medium heat. Add onions and sauté onions 2 to 3 minutes until slightly softened.
  6. Pour the marinade and water into the pan. Bring to a gentle boil and simmer for 2 minutes.
  7. Return the liver to the pan and bring the sauce to a boil. At this stage, if using MSG, add it and stir gently. Once boiling, reduce the heat to low, cover, and simmer for 3 to 5 minutes, or until the liver is cooked.
  8. Transfer to a serving dish, and serve with rice.
